Culurgiones ogliastrini

Culurgiones can be prepared at any time of the year and during any holiday, such as Easter lunch. Culurgiones tradition wants that the latter were not only considered a food, but a precious gift, a sign of esteem, respect and friendship. SA spighittathe typical closing of Ogliastra, culurgione represents the symbol of grain to propitiate the new crop year.

Ingredients for the dough:
– 220 GM durum wheat re-milled semolina
– 80 g of "00" flour
– 150 g water
-1 spoonful of olive oil
-a pinch of salt
INGREDIENTS FOR THE FILLING:
-600 g of red potatoes
– grated pecorino 70gr
– grated fresh pecorino 70gr
-half a cup of olive oil with a little garlic clove (or half a clove of garlic)
– 14 Chop mint leaves
